
A dream forged during a global pandemic
The passion that defines us and our pride in our roots led us to start writing the story of D’Cortés during the most challenging times.
The red clay-soil and temperate climate that characterize San José de Gracia, in the heart of the agave landscape region, define the signature and origin of our establishment. This land is where we are born, and it is where we cultivate our agave; the tequilana weber blue agave.
After a 7-year waiting period for growth, the painstaking harvest and selection of the agave piñas commence. The artisanal work of our jimadores is a reflection of the experience passed down through families and generations. They hand-cut the finest piñas with precision, attending to every detail before moving on to the cooking process to extract their precious juice.
It is at this point that the agave is transported to our factory to be loaded into the ovens, where the piñas are steam-cooked, yielding the distinctive sweet aroma of tequila. Once cooked, the ovens are unloaded to proceed with the milling process, separating the fibers and extracting the juice, which is then stored in our tanks for fermentation
Our master tequila craftsmen have amassed generations of knowledge that culminate in the refinement process, distillation, filtration, and aging in white oak barrels, resulting in our tequilas.
